KITCHEN SCENE (BALI)

Chewing her betel, and bare to the waist,
grinding a ginger-root, chopping shallots;
Koki sits pounding, and mixing a paste,
humming a pokok, preparing her pots.

Fish in banana leaves, pungent with spice,
lobster in sauce of a coconut cream;
larvae of dragon-flies, chillies and rice,
dishes fantastic, an epicure’s dream.

Ant-eater, boiled, and served in bamboo,
turtle with peanuts, verbena, and limes;
fighting cocks, vanquished, the gods to subdue,
cooked to the sweet-sounding gamelan’schimes.
